Potato Bread Pakora/Bonda

By: Ashok
Region: Indian
Dish:Vegetarian - Breakfast/Tiffins/Snacks
Main Ingredient: Potato & Bread
Servings: 10
Time to Prepare: 45 Minutes
Diffculty: Simple

Ingredients

1. Potato (Medium Size 4/Large Size 2)
2. White Bread (Without Crust)
3. Bread Crumbs (Italian from Walmart)
4. 2 Large Eggs
5. Milk (1 Cup)
6. One Onion (Chopped)
7. Fresh Green Chilly (Finely Sliced)
8. Fresh Curry Leaves (Optional)
9. Chana Dal (1 TBSP)
10. Haldi Powder
11. Mustard Seeds
12. Salt
13. Cooking oil

Directions

-> Boil the potatoes with skin on (2 whistles in a Prestige or Hawkins Cooker)
-> Remove from cooker, let it cool and then peel off skin. Mash the boiled potatoes half way to leave some lumps
-> In a frying pan, heat some oil (substitute with Ghee to add flavor), about 2 tbsp, heat to medium, add mustard seeds, then chana dal, then green chilly, then chopped onion, then haldi power, then mashed potato and then finally salt per taste.
-> Fry until potato looks like the masala inside masala dosa.
-> Remove from heat and let it cool completely
->Take the white bread and cut the crusts off with a knife. Set aside
->In a shallow bowl, break the two eggs, add the milk and stir well so the milk blends in with the egg
->In another shallow bowl pour the Italian bread crumbs
-> Once the potato has cooled down completely, make 1 inch rounds and finally mould it to oval shape. A little oil or ghee on your palms will help achieve this without a mess
->take a bread slice, place the potato round, dip your palms alternately in the egg & milk mix and cover the bread with the potato round with another slice of bread. repeat the dipping of palms and moisten the bread slices just enough so you can cover the potato round without any gap.
-> then roll this bread roll in Italina bread crumbs. dip your palms one more time in egg & milk mix and press the bread round so the bread crumbs stick to the surface.
-> roll the bread round in the bread crumbs one more time.
->place a deep pan on medium heat and fill with enough oil so the bread rounds will be submerged completely.
->make all the rounds at one time and then deep fry them in medium heat oil until golden brown
-> remove from oil, place on paper towel or a grill for oil to drain.

Enjoy with any kind of chutney, ketchup.

It goes well with Maggi Hot & Sweet Sauce.

It best goes with a sauce call "Kasundi" which is mustard sauce from West Bengal.

You can cut some fresh onion slices and cucumber and enjoy the bread pakora with the Kasundi.
