-1 large mango
-1/4 cup blueberry
-2 tablespoon granulated sugar
-1 1/3 cup low fat milk
-1/2 cup chopped walnuts
-1/4 teaspoon salt
-1 teaspoon virgin olive oil
-1/4 cup strawberry
-1 1/2 cup all purpose flour
-1 teaspoon baking powder
-1 egg
-1/2 cup mashed banana
-maple syrup as required
- Peel the mango and then slice the fruit into chunks. Also cut the strawberries and blueberries into pieces. Mix all the fruits well and set aside. In a bowl, mix together flour, sugar, baking powder and salt.
- Take another bowl and proceed to thoroughly mash the banana. Once mashed, add in the milk, egg, and chopped walnuts, and mix them together. Next, incorporate the dry ingredients mixture into this banana mixture, ensuring everything is well combined. If the mixture appears excessively thick, you can add a small amount of milk to achieve the desired consistency.
- Preheat a griddle or skillet, preferably nonstick, to a medium heat. Ensure the surface is adequately coated with oil by brushing it evenly. Proceed to pour approximately 1/4 cup of batter onto the pan for each pancake. Cook the pancake for approximately 2 minutes, then flip it over and continue cooking for an additional minute or until it achieves a desirable golden color. Repeat this process to make more pancakes using the remaining batter.
- Serve the pancakes with the prepared fruit medley and drizzle them with maple syrup or honey, if desired.
