Soya Chunk Biryani

Ingredients

-1 cup basmati rice (soaked 30 mins)
-1 cup soya chunks (boiled & squeezed)
-1 onion (sliced)
-1 tomato (chopped)
-2 green chilies
-1 tsp ginger-garlic paste
-Whole spices (bay leaf, cloves, cardamom)
-1/2 tsp turmeric, 1 tsp garam masala, 1 tsp biryani masala
-Mint and coriander leaves
-2 tbsp oil or ghee

Directions

- In a pot, heat oil, add whole spices, then sauté onions and green chilies.

- Add ginger-garlic paste, cook for a minute.

- Add tomatoes, cook until soft.

- Add all masalas and sauté.

- Add cooked soya chunks and mix well.

- Add soaked rice and 1.75 cups of water.

- Cook covered until rice is done.

- Garnish with mint/coriander.
