* egg substitute for 3 eggs
* cornmeal
* salt
* pepper
* 1-2 green tomatoes
canola or vegetable oil. Enough to cover pan
mix egg replacer (I used Ener-G Egg Replacer). with a touch more water then needed to make sort of a paste, instead of the egg white mix in one bowl.
In second bowl, dump a good amount of cornmeal for covering sides of tomatoes.
Cut tomatos about half inch thin, the thinner the cut the less frying time it takes.
Dip the tomatoes in batter, both sides. Cover both sides in cornmeal, and fry for about 10 min or so. 5 on each side, or until slightly brown and a tad mushy.
Dry off access oil with a paper towel.
Serve with either turbinado sugar, or salt and pepper.
